
In 1938, my grandmother moved to the Canal Zone in Panama as a newlywed. While there, one of my grandfather's Navy friends came to a waffle dinner at their house. He offered to make his mother's "waffle sauce" to serve with their waffles that night. Ever since then, my family has been making this waffle sauce to serve with pancakes and waffles.
I've updated my grandmother's recipe below with a gluten free variation. It had been a while since I made it and my kids were thrilled when they saw the white sauce waiting on the stove this morning.

Vanilla Waffle Sauce - Gluten Free or Not
Yield: 2 1/2 - 3 cups
1/4 cup brown rice flour*
3/4 cup sugar
2 cups milk
2 tablespoons butter
1/2 vanilla bean, scraped or 1 teaspoon vanilla
Nutmeg, freshly ground if possible
* if you are not in need of a gluten free recipe, substitute 1/4 cup AP flour for the item marked with an *
In a small saucepan, whisk together the flour and sugar, then add the milk. Set the heat to medium and whisk the ingredients together. Continue stirring frequently until it begins to bubble and is thickened. Once it has thickened, remove pan from the heat. Add the butter and vanilla and stir to combine. Pour over hot waffles and grate or sprinkle nutmeg over the top. Enjoy!
