Key Lime and Honey Winter Fruit Salad

Sweet oranges, pineapple chunks and kiwi slices are tossed with a simply honey lime poppyseed dressing. This whole salad took just minutes to prepare. My family eats a lot of fruit. Simple fruits, baked fruits, fruit salads, chocolate dipped or blended into smoothies, we love it all. This time of year, the selection is limited, but there is always a heaping basket of oranges on the counter. I wanted a fruit salad based on our favorite cutie oranges and this one was perfect.

My boys ate every bite of this salad and declared it perfect. My youngest wasn't about to eat out of a plastic bowl after he saw his brother's glasses. So, I poured his fruit into a juice glass and he was thrilled. Who could resist that face?

Key Lime and Honey Winter Fruit Salad
recipe adapted from Mel's Kitchen Cafe
Yield: 4 servings

6 clementine oranges, peeled and sectioned
4 kiwis, peeled, cut in thick slices and then halved
1 20 ounce can of pineapple chunks, drained well
2 key limes or 1 regular lime, juiced, about 1 tablespoon
2 tablespoons honey
Optional: 1/2 teaspoon poppy seeds

Place the fruit in a bowl gently toss with your hands or a large spoon. Whisk together the lime juice, honey and poppy seeds. Drizzle over the fruit and toss gently to evenly coat. Serve immediately or chill until ready to serve. Enjoy!
